Fatty Acid Content and Composition of Various Korean Shellfish

Abstract

|
Twelve species of Korean shellfish were analyzed for their fatty acids content and composition. Most shellfish contained 1.38-4.04% of total fatty acids by weight. Monounsaturated fatty acids, polyunsaturated fatty acids, and saturated fatty acids constituted 11.43-27.46, 18.96-50.40, and 30.68-55.32% of total fatty acids in shellfish, respectively. The ratio of polyunsaturated fatty acids to saturated fatty acids ranged from 0.34-1.64. Total n-3 fatty acid contents (6.13-45.93%) were higher than those of n-6 (2.76-16.24%). All bivalves showed high n-3/n-6 ratios (1.97-15.33). These results show the nutritional value of shellfish as dietary sources of eicosapentaenoic acid and docosahexaenoic acid with desirable n-3/n-6 ratio.
